This exceptional coffee comes from the Ayla processing station in the Sidama region, near Bombe Mountain. Established in 2010, the station serves approximately 375 local smallholder farmers, each cultivating native varieties like Mikicho and Setami on small plots, often referred to as “coffee gardens.” Due to tradition or lack of access, these farmers typically do not use fertilizers or pesticides, lending the coffee a clean, authentic character. The meticulous natural processing involves drying the cherries on raised beds, ensuring a clean and complex aromatic profile that truly showcases the unique terroir of Ethiopia.
