The coffee’s unique flavor is the result of an intricate honey process. After an initial five-day fermentation in a pressurized, oxygen-free tank, the cherries are de-pulped and returned to a second three-day fermentation. This is where the extracted coffee juice is mixed with a select fruit. The beans are then carefully dried for another five days to lock in their complex flavors.
