Discover the vibrant terroir of Acevedo, Huila, with this exceptional microlot produced by Luis Anibal Calderon at Finca Villa Betulia. A top 30 finalist in the 2016 Huila Best Cup, Luis works closely with his family to constantly refine and innovate their processing techniques. For this specific Colombia variety lot, only the ripest cherries are meticulously collected and dry-fermented for 25 hours. The coffee is then carefully dried in a parabolic dryer for an average of 25 days. This controlled Anaerobic Natural process yields a highly complex cup characterized by mellow sweetness and tons of boozy acidity. Expect rich flavors of dark chocolate and dried berries, beautifully highlighted by notes of cooked cranberry and a mild vanilla finish.
