This coffee presents a highly expressive and distinctive flavor profile, featuring a profound taste of blackberry, dark chocolate, and orange peel, with a subtle floral undertone.
Martha, a producer from a long line of coffee farmers, inherited the 2-hectare farm 12 years ago. Eight years ago, she transitioned to cultivating the demanding Geisha variety and has since built a reputation for extracting exceptional flavors.
The remarkable profile of this lot is achieved through an experimental process:
- Initial Fermentation: The Geisha cherries are fermented to soften them and extract the fruit juice (mosto).
- Anaerobic Infusion: The de-pulped coffee then undergoes a 60-hour sealed anaerobic fermentation with the mosto extracted from Pink Bourbon cherries.
This process is carefully designed to preserve the elegant Geisha profile while enhancing its fruity notes, resulting in an enhanced roundness and sweetness. Martha is determined to “continue innovating and seeking new fermentation processes and protocols,” making this a truly unique and forward-thinking cup.
